Recipes & Tips

This page is for some awesome recipes that go well with the fish fry that you might have with the fish that you caught on your trip.  We also will post helpful tips for things that come up.

—Lynne's Famous Tartar Sauce—
(Serves 20-30)

The recipe makes a large batch, but can easily be cut down to reduce the number of servings.

Ingredients-2 oz bottle

    30oz jar Kraft Real Mayonnaise
    32oz jar Kraft Miracle Whip Salad Dressing
    6oz jar Dill Pickle Relish
    6oz jar Sweet Pickle Relish
    1 tbsp Garlic Powder
    1/2 small yellow onion, finely grated
    2 tsp salt
    1 level tbsp cayenne pepper (or to taste, we like it spicy!)


    Mix all ingredients in large bowl and serve next to a plate of fresh fried catfish fillets. Keep unused portions refrigerated for future use.
    NOTE:  I have found that if you use 2 of the Rubbermaid 2qt squeeze containers they work better for outdoor gatherings (click on photo to find the best deal).

Tip For Frying Catfish

In the many years that we have fried catfish we have found that if you cut the fillets in about 2"x2" pieces and bread them in a paper bag with your favorite cornmeal mixture they seem to cook a bit more even.  Sometimes it is harder to get that thick fillet to cook evenly throughout.  On the really thick fillets, just slice them in half and make 2 thinner fillets...more bang for your buck!
